Tomato, Tomato: Seasonality & Saucing

Tomato season has been well underway over the past few months and saucing tomatoes are now perfectly in season!

Over the next few weekends, farmers markets will see an abundance of hybrid saucing tomatoes and heirloom saucing tomatoes.

Our farmers will have 5 and 10kg boxes for as low as $3-$5 per kilo. Heirloom varieties will be in the range of $6-$10 per kilo and can be used solo or bulked out with the cheaper ones.

Heirloom saucing tomatoes with a low acidity go soft very quickly. They need to be sold and sauced at speed. Hence why you get these great offers from regenerative farmers!

Hybrid tomatoes are bred to travel and survive in cold storage. They have a higher acidity because the compound that causes them to ripen is shut down. They will be available for much longer at the markets than heirloom varieties.
